What is the difference between this recipe and latkes?
Both potato pancakes and latkes are round in shape and have slivered bits of potato sticking out here and there. The big difference between this recipe and latkes is that these potato pancakes are thinner than a latke. A thinner pancake cooks quicker and I like the texture better than a thicker, latke. This style is closer to German potato pancakes the way my grandmother made them.
Why do my potato pancakes fall apart?
Potato pancakes often fall apart because they need more flour to hold them together. Even adding an additional 1-2 tablespoons of flour can help if your test pancake is falling apart.
Can I use mashed potatoes for this recipe?
You can use leftover mashed potatoes for this recipe but you will need to make sure they are moist enough to be formed into patties before cooking. Since leftover mashed potatoes are already cooked, look to brown and warm them instead of completely cooking them like a raw potato mixture.
Some people even use boiled potatoes to make them into grated potatoes in a food processer.
Recipe Variations & Tips
Although not traditional, it's hard not to consider adding additional ingredients to these potato pancakes. Bits of bacon, sausage, fresh herbs, shredded chicken, and even leftover pulled pork would all be delicious to add with a little garlic powder.

Potato Pancake Recipe
Ingredients
- 1½ cups shredded potato
- ¼ cup flour
- 2 eggs
- ¼ cup milk
- ¼ cup finely diced onion
- ¼ cup finely diced green onions
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Beat eggs and milk until frothy
- Add remaining ingredients to egg mixture and stir to combine
- Allow mixture to rest for 20 minutes
- Preheat griddle to medium-high heat
- Place a skim coating of oil on the cooking surface
- When the oil begins to shimmer add about ¼ cup of potato pancake batter to the griddle
- Repeat with remaining batter
- Press the batter to flatten and cook each side for 3-4 minutes until golden brown flipping once
