I tried making a different rub for steak like the one I read about Bobby Flay making on the Food Network. I really like the savory heat that the seasoning Harissa brings to a rub so I will often add Harissa and substitute Alpine Touch for the salt. Both spices are manufactured here in Montana and it is fun to use products from people nearby. This Coffee Rub has a crisp, savory and almost woodsy flavor that works amazingly well on beef grilled over hardwood lump charcoal. If you have not tried doing a coffee dry rub for grill, treat yourself. You will be pleasantly surprised!
Coffee Rub Just Like Bobby Flay's But Better:
¼ cup ancho chili powder
¼ cup finely ground espresso
2 tablespoons Harissa
2 tablespoons dark brown sugar
1 tablespoon dry mustard
1 tablespoon Alpine Touch Seasoning
1 tablespoon ground black pepper
1 tablespoon ground coriander
1 tablespoon dried oregano
2 teaspoons ground ginger
2 teaspoons chili de arbol powder

Can you recommend a substitute for the Harissa and Alpine Touch Seasoning? I live in Maine and don't have access to either.

Hey John- You can order either of those items on Amazon with links in the recipe. Harissa you should be able to find at any natural type grocery store or spice/Tea shops. It has a robust warm flavor that could probably be substituted with a spicy or smoky and spicy paprika. The Alpine Touch is a prime rib style seasoning with strong salt, pepper, and garlic flavors. Have fun with it, and if you make the rub and grill something wonderful, send me a photo- I will post it! Good luck!
