French toast is delicious when cooked on the Blackstone griddle but turning French toast into a bacon sandwich is even better. Delicious for breakfast, brunch, or a snack this simple recipe does not disappoint.
Lay the bacon strips on the griddle and begin cooking
While the bacon cooks, prepare the other ingredients
Cut the bread into thick slices, about 2 inches thick
In a large bowl add eggs and half & half
Whisk to combine
Add cinnamon to eggs and whisk to combine
Flip bacon and move to the other side of the griddle
Dip French bread slices into the egg mixture and briefly submerge on both sides
Place the egg coated bread on the griddle in rendered bacon oils
Repeat with remaining bread slices
Cook the bacon to your desired doneness, then remove and blot dry with paper towels
Cook bread for 3 minuites or until it becomes golden and flip
Cook the second side of the bread for an additional 3 minutes or until it becomes golden
Remove French toast and sandwich two slices between bacon
Serve immediately

French toast can be a blank canvas for ingredients and flavors. In this recipe, I use cinnamon and cream to flavor the egg mixture but consider using other flavors in your eggs.
